Cheddar Jalapeno Cornbread

Perfect with chilli, barbeques, soup or pulled pork. 

Ingredients:

  • 1 cup yellow cornmeal 
  • 1 cup all purpose flour 
  • 1 tbsp baking powder 
  • 1 tsp salt 
  • 2 tbsp sugar 
  • 1 cup shredded sharp cheddar cheese 
  • 1-2 jalapeno, finely diced (remove seeds for less heat) OR 1 tbsp pickled jalapeno, finely diced 
  • 1 cup milk 
  • 2 large eggs 
  • 1/3 cup melted butter or canola oil 
  • 1/2 cup sour cream 

Instructions:

  1. Preheat oven to 400°F.
  2. Grease and 8 x 8" baking pan.
  3. In a large bowl, mix cornmeal, flour, baking powder, salt and sugar.
  4. Stir in the cheddar cheese.
  5. In another bowl, whisk milk, eggs, melted butter or oil, sour cream, and jalapeño.
  6. Pour wet ingredients into dry ingredients and mix just until combined. Do not overmix.
  7. Spread batter into the prepared pan.
  8. Bake for 20 to 25 minutes or until toothpick inserted in the centre comes out clean.
  9. Let cool for approximately 10 minutes before slicing.
