Perfect with chilli, barbeques, soup or pulled pork.
Ingredients:
- 1 cup yellow cornmeal
- 1 cup all purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 2 tbsp sugar
- 1 cup shredded sharp cheddar cheese
- 1-2 jalapeno, finely diced (remove seeds for less heat) OR 1 tbsp pickled jalapeno, finely diced
- 1 cup milk
- 2 large eggs
- 1/3 cup melted butter or canola oil
- 1/2 cup sour cream
Instructions:
- Preheat oven to 400°F.
- Grease and 8 x 8" baking pan.
- In a large bowl, mix cornmeal, flour, baking powder, salt and sugar.
- Stir in the cheddar cheese.
- In another bowl, whisk milk, eggs, melted butter or oil, sour cream, and jalapeño.
- Pour wet ingredients into dry ingredients and mix just until combined. Do not overmix.
- Spread batter into the prepared pan.
- Bake for 20 to 25 minutes or until toothpick inserted in the centre comes out clean.
- Let cool for approximately 10 minutes before slicing.
