Edamame Crunch Salad

A colourful and crispy salad with protein-rich edamame,  fresh vegetables and a homemade sesame ginger dressing.

Makes 4 servings.

Ingredients:

  • 2 cups shelled edamame 
  • 2 cups shredded purple or green cabbage (or both)
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 2 green onions, sliced 
  • 1 small cucumber, sliced 
  • 2 tbsp chopped fresh cilantro or parsley 
  • 2 tbsp sesame seeds
  • 2 tbsp chopped peanuts (optional)

For the dressing:

  •  3 tbsp soy sauce 
  •  1 tbsp sesame oil 
  • 2 tbsp rice vinegar 
  • 1 tbsp honey or maple syrup 
  • 1 tsp grated fresh ginger 
  • 1 garlic clove, minced 
  • 1 tbsp olive or canola oil 

Instructions:

  1. In a large bowl, add the edamame, all the vegetables and the cilantro.
  2. In a small bowl, whisk together the dressing ingredients until combined.
  3. Pour the dressing over the vegetables and toss to coat evenly.
  4. Sprinkle with sesame seeds and chopped peanuts (if using).
  5. Serve and enjoy.
