A colourful and crispy salad with protein-rich edamame, fresh vegetables and a homemade sesame ginger dressing.
Makes 4 servings.
Ingredients:
- 2 cups shelled edamame
- 2 cups shredded purple or green cabbage (or both)
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 2 green onions, sliced
- 1 small cucumber, sliced
- 2 tbsp chopped fresh cilantro or parsley
- 2 tbsp sesame seeds
- 2 tbsp chopped peanuts (optional)
For the dressing:
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tsp grated fresh ginger
- 1 garlic clove, minced
- 1 tbsp olive or canola oil
Instructions:
- In a large bowl, add the edamame, all the vegetables and the cilantro.
- In a small bowl, whisk together the dressing ingredients until combined.
- Pour the dressing over the vegetables and toss to coat evenly.
- Sprinkle with sesame seeds and chopped peanuts (if using).
- Serve and enjoy.
