Roasted Broccoli

Roast a whole broccoli crown and avoid cutting into florets, making it an attractive centrepiece.

Makes 2-4 servings, depending on the size of the broccoli.

Ingredients:

  • 1 large broccoli crown 
  • 1 tbsp olive oil 
  • 1/4 tsp salt 
  • 1/8 tsp pepper 
  • 1 garlic clove, minced 
  • 2 tsp lemon juice, optional for finishing 
  • 1 tbsp grated Parmesan 

Instructions:

  1. Slice the thick middle stem underneath the crown so the whole crown sits stable and upright. Rinse and dry completely.
  2. Preheat the oven to 425°F
  3. Lightly coat with olive oil all over and season with salt, pepper and garlic.
  4. Place the crown on a baking sheet cut side down.
  5. Roast for 18-22 minutes.
  6. Remove from the oven and sprinkle lemon juice all over, if using, and Parmesan. Serve.
