Roast a whole broccoli crown and avoid cutting into florets, making it an attractive centrepiece.
Makes 2-4 servings, depending on the size of the broccoli.
Ingredients:
- 1 large broccoli crown
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 garlic clove, minced
- 2 tsp lemon juice, optional for finishing
- 1 tbsp grated Parmesan
Instructions:
- Slice the thick middle stem underneath the crown so the whole crown sits stable and upright. Rinse and dry completely.
- Preheat the oven to 425°F
- Lightly coat with olive oil all over and season with salt, pepper and garlic.
- Place the crown on a baking sheet cut side down.
- Roast for 18-22 minutes.
- Remove from the oven and sprinkle lemon juice all over, if using, and Parmesan. Serve.
