Ingredients:
- 1 lb carrots, spiralized
- 1 1/2 tbsp honey
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1 tbsp chopped fresh parsley
Instructions:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- In a large bowl, toss the spiralized carrots with honey, olive oil, salt, pepper, and garlic powder.
- Spread the carrots in an even layer on the baking sheet. Avoid overcrowding so they roast rather than steam.
- Roast for 20–25 minutes, stirring once halfway through, until tender with lightly caramelized edges.
- Transfer to a serving dish and sprinkle with parsley if desired.
