- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 large egg
- 1/2 cup whole milk
- 1/3 cup canola oil
- 1 tsp vanilla extract
- 1/2 cup hot coffee
Ganache:
- 1 Cup semi sweet or dark chocolate chips
- 1/2 cup 35% Whipping cream
- 1 tbsp butter
Garnish:
- 1 cup sliced strawberries or any fruit such as blueberries, raspberries, etc.

- in a large bowl, whisk together the first 6 dry ingredients.
- add egg, milk, oil, and vanilla. Mix until smooth.
- Slowly stir in the hot coffee.
- Pour the batter into the prepared cake pan.
- Bake. If using the air fryer, preheat to 320°F and bake for 28 to 35 minutes. If using the oven, preheat to 350°F and bake for 30 to 38 minutes.
- Check with a toothpick. It should come out with a few moist crumbs, but no wet batter.
- Let the cake cool in the pan for about 20 minutes, then remove and let cool completely.
- Make the ganache: Place the chocolate chips in a heatproof bowl.
- Heat the cream until it just starts to simmer. Then pour it over the chocolate. Do not stir, just let sit for 2 minutes. Stir until smooth and completely blended, then stir in the butter.
- Allow the ganache to cool for 10 to 15 minutes until it thickens slightly.
- Poor the ganache over the cool cake and spread evenly.
- Let the ganache set for 30 minutes.
- Garnish with your fruit of choice.
