Stuffed Cucumber Cups

These bite-sized cucumber appetizers are cool, crunchy and packed with flavour, making them a great low-carb party snack.

Ingredients:

  • 2 English cucumbers
  • 1/2 cup cream cheese, softened
  • 2 tbsp sour cream or plain Greek yogurt 
  • 1 tbsp fresh dill, finely chopped (or 1 tsp dried)
  • 1 tbsp fresh chives, finely chopped 
  • 1 tsp lemon juice 
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper 
  • 1/4 tsp paprika 

Instructions:

  1. Wash the cucumbers.
  2. Cut them into 1 1/2-inch thick cylinder.
  3. Using a small spoon or melon baller, scoop out the centre of each piece, leaving 1/4 inch of cucumber at the bottom to form a cup.

  4. In a bowl, mix together the remaining ingredients except for the paprika. Stir until smooth and creamy.
  5. Spoon or pipe the filling into each cucumber piece, slightly mounding the filling on top.
  6. Sprinkle each cucumber piece with paprika.
