These bite-sized cucumber appetizers are cool, crunchy and packed with flavour, making them a great low-carb party snack.
Ingredients:
- 2 English cucumbers
- 1/2 cup cream cheese, softened
- 2 tbsp sour cream or plain Greek yogurt
- 1 tbsp fresh dill, finely chopped (or 1 tsp dried)
- 1 tbsp fresh chives, finely chopped
- 1 tsp lemon juice
- 1/4 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/4 tsp paprika
Instructions:
- Wash the cucumbers.
- Cut them into 1 1/2-inch thick cylinder.

Using a small spoon or melon baller, scoop out the centre of each piece, leaving 1/4 inch of cucumber at the bottom to form a cup.
- In a bowl, mix together the remaining ingredients except for the paprika. Stir until smooth and creamy.
- Spoon or pipe the filling into each cucumber piece, slightly mounding the filling on top.
- Sprinkle each cucumber piece with paprika.
