
A classic recipe with a subtle crunch on the outside and a soft chewy texture on the inside.
Makes approximately 6 dozen cookies.
Ingredients:
- 1 cup Imperial brand margarine (2 squares)
- 3/4 cup granulated sugar
- 3/4 cup dark brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 package semi sweet chocolate chips (270g)
- 1 1/2 cups chopped walnuts (optional)
Instructions:
- In a large mixing bowl, cream together the margarine, vanilla and both sugars.
- Beat in the eggs, one at a time.
- In a separate bowl, whisk together the flour, baking soda and salt. Gradually add it to the butter mixture on low speed until combined.
- Stir in the chocolate chips and walnuts, if using.
- Drop a tablespoon of the cookie dough onto a parchment-lined baking sheet, leaving a bit of space between each cookie to allow for expansion. You should have approximately 2 dozen cookies on the baking sheet.
- Bake in a preheated 375°F oven for 8 to 10 minutes.
- Let cool for a couple of minutes before placing the cookies on a wire rack. Repeat steps 5 and 6 until all the cookie dough is gone.
