Chocolate Chip Cookies

A classic recipe with a subtle crunch on the outside and a soft chewy texture on the inside. 

Makes approximately 6 dozen cookies.

Ingredients:

  • 1 cup Imperial brand margarine (2 squares)
  • 3/4 cup granulated sugar 
  • 3/4 cup dark brown sugar 
  • 1 teaspoon vanilla extract 
  • 2 eggs
  • 2 1/4 cups all purpose flour 
  • 1 teaspoon baking soda 
  • 1/2 teaspoon salt 
  • 1 package semi sweet chocolate chips (270g)
  • 1 1/2 cups chopped walnuts (optional)

Instructions:

  1. In a large mixing bowl, cream together the margarine, vanilla and both sugars.
  2. Beat in the eggs, one at a time.
  3. In a separate bowl, whisk together the flour, baking soda and salt. Gradually add it to the butter mixture on low speed until combined.
  4. Stir in the chocolate chips and walnuts, if using.
  5. Drop a tablespoon of the cookie dough onto a parchment-lined baking sheet, leaving a bit of space between each cookie to allow for expansion. You should have approximately 2 dozen cookies on the baking sheet.
  6. Bake in a preheated 375°F oven for 8 to 10 minutes.
  7. Let cool for a couple of minutes before placing the cookies on a wire rack. Repeat steps 5 and 6 until all the cookie dough is gone.
