Balsamic Chicken

Oven baked chicken with roasted vegetables and rice with delicious balsamic and smoked paprika flavours. All cooked together in a casserole dish.

Ingredients:

  • 2 yellow onions, cut into wedge
  • 3 large tomatoes, cut into wedges 
  • 3 red bell peppers 
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon ground thyme 
  • 1/2 teaspoon salt 
  • freshly ground black pepper
  • 1/2 teaspoon smoked paprika 
  • 2 tablespoons balsamic glaze 
  • 1/2 cup long grain rice 
  • 4-6 chicken breasts or chicken thighs (bone-in and skin-on will give more flavour)
  • seasoning salt, smoked paprika and black pepper to season each chicken

Instructions:

  1. Place all the vegetables in a casserole dish. Add the oil, ground thyme, salt, pepper, smoked paprika and balsamic glaze. Toss all together.
  2. Make a well in the centre by pushing all the vegetables aside and add the rice. Drizzle some oil over the rice. Spread the rice evenly over the bottom of the dish and cover the rice with the vegetables.
  3. Season each chicken piece with the seasoning salt, smoked paprika and pepper. Place on top of the vegetables in the casserole dish and drizzle the chicken pieces with some olive oil and balsamic glaze.
  4. Bake in a preheated 350°F oven for 1 hour.
  5. Take out of the oven and let rest for 10 minutes.
