Meatloaf

Assemble. Cook. Done. Delicious!

Ingredients:

  • 4 russet potatoes, skin cleaned and scrubbed

MEATLOAF:

  • 2 lbs lean ground beef
  • 1 egg, whisked 
  • 1 onion, chopped 
  • 1 cup plain yogurt 
  • 1 1/4 cup breadcrumbs 
  • 2 cloves garlic, chopped
  • 2 teaspoons smoked paprika 
  • 3 teaspoons Montreal steak spice 
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper 

 

GLAZE:

  • 1/2 cup ketchup
  • 3 tablespoons grainy Dijon mustard 
  • 3 tablespoons brown sugar

Instructions:

  1. Place the potatoes directly on the wire rack in the centre of the oven and turn the oven on to start preheating to 350°F.
  2. In a large bowl, combine all the meatloaf ingredients and mix well until thoroughly combined.
  3. Spray a loaf pan with nonstick cooking spray on all sides and add the meatloaf mixture, pressing it down firmly into the loaf pan.
  4. In a small bowl, combine the glaze ingredients and mix well and spread on top of the meatloaf.
  5. Bake in the preheated 350°F oven with the potatoes for 1 hour.
  6. Remove the meatloaf and the potatoes from the oven and let rest for 10 minutes. Pierce, the potatoes with a fork to test if it has baked.
  7. Cut each potato in half and add desired toppings such as butter, salt, pepper, sour cream, etc.
  8. Serve with a store-bought salad kit for a complete meal.
