Whether you're new to borscht or grew up loving it, this version is easy to make and absolutely delicious.
Makes approximately 6 servings.
Ingredients:
- 2 tbsp oil or butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 3 medium beets, peeled and grated
- 2 carrots, grated
- 2 potatoes, diced
- 2 cups shredded green cabbage
- 1 can (14 oz) diced tomatoes
- 6 cups beef or vegetable broth
- 1 tbsp tomato paste
- 1 tsp sugar
- 2 tbsp vinegar
- Salt and pepper to taste
- Fresh dill (optional)
- Sour cream for serving
Instructions:
- Heat oil in a large pot. Add onion and cook until soft, about 5 minutes. Stir in garlic.
- Add beets and carrots. Cook for 5 minutes.
- Add potatoes, cabbage, diced tomatoes, tomato paste and broth. Bring to a boil, then reduce to a simmer for 20 to 25 minutes.
- Stir in sugar and vinegar. Season with salt and pepper.
- Simmer for another 5 minutes.
- To serve, ladle into bowls. Add a dollop of sour cream and sprinkle fresh dill on top.
