Classic Borscht

Whether you're new to borscht or grew up loving it, this version is easy to make and absolutely delicious.

Makes approximately 6 servings.

Ingredients:

  • 2 tbsp oil or butter 
  • 1 onion, finely chopped 
  • 2 cloves garlic, minced 
  • 3 medium beets, peeled and grated 
  • 2 carrots, grated 
  • 2 potatoes, diced 
  • 2 cups shredded green cabbage 
  • 1 can (14 oz) diced tomatoes 
  • 6 cups beef or vegetable broth 
  • 1 tbsp tomato paste 
  • 1 tsp sugar 
  • 2 tbsp vinegar 
  • Salt and pepper to taste 
  • Fresh dill (optional)
  • Sour cream for serving 

Instructions:

  1. Heat oil in a large pot. Add onion and cook until soft, about 5 minutes. Stir in garlic.
  2. Add beets and carrots. Cook for 5 minutes.
  3. Add potatoes, cabbage, diced tomatoes, tomato paste and broth. Bring to a boil, then reduce to a simmer for 20 to 25 minutes.
  4. Stir in sugar and vinegar. Season with salt and pepper.
  5. Simmer for another 5 minutes.
  6. To serve, ladle into bowls. Add a dollop of sour cream and sprinkle fresh dill on top.
