Penne Pasta

Simple, cozy, and full of flavour — it’s the kind of dish that feels like a warm hug in a bowl.

Makes 4 servings.

Ingredients:

  • 5 bacon slices, chopped 
  • 1 large onion, chopped 
  • 5 mild or hot Italian sausages 
  • 5 garlic cloves, chopped 
  • 1 1/2 red bell peppers, chopped 
  • 400g penne rigate 
  • 1/2 tsp chili flakes (optional)
  • 1/2 cup grated Parmesan 

Instructions:

  1. In a large pot over medium heat, cook the bacon and onions until bacon is cooked and onions are caramelized, about 30 minutes, stirring occasionally. Season with salt and pepper. Remove from pot and place in large serving bowl.
  2. In the same pot, add the sausages with the casings removed and break it up with a spatula and cook thoroughly,about 20 minutes. Remove from pot and place in the serving bowl.
  3. Add the garlic to the pot and once you start to smell the garlic, add the red bell peppers. Stir and cook for two minutes. Remove from pot and place in the serving bowl.
  4. Add water to the pot and bring to a boil, then add 2 tablespoons of salt and the penne pasta. Cook, according to package directions,about 10 minutes.
  5. With a large slotted spoon, remove all the pasta from the pot and place in the serving bowl, reserving the water. Add 1-1/2 cups of the pasta water to the serving bowl. Mix all together.
  6. Sprinkle with red chili flakes, if using,and the Parmesan cheese. Enjoy!
