
Reduce food waste and save all your vegetable scraps.
Give your otherwise garbage-bound vegetable scraps a useful purpose.
Save them and place in a large freezer bag and place in your freezer. Continue to add as you accumulate scraps. When full, place the contents of the bag into a large pot. Add water, salt and pepper, parsley and a bay leaf. Bring to a boil. Cover with a lid and simmer for 2 hours to make broth.
If desired, add chicken carcass or beef bones for additional flavour.
