A fresh and simple appetizer with juicy tomatoes, fresh basil, and Parmesan cheese.
Ingredients:
For the bread:
- 1 baguette, about 20" long
- 1 garlic clove, peeled and cut in half
For the topping:
- 4 medium Roma tomatoes, diced
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic glaze or vinegar
- 2 tbsp fresh basil, chopped
- 1 garlic clove, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup grated Parmesan cheese
Instructions:
- Slice the baguette into 3 equal sections. Slice each section horizontally and remove some of the insides to create a cavity for the topping.
- In a bowl, combine the topping ingredients except for the Parmesan cheese.
- Toast the six baguette pieces and immediately rub each with the halved garlic clove.
- Spoon the topping onto each baguette and add the Parmesan cheese on top.
- Toast again until the cheese has melted.
- Serve and enjoy warm or cold.
