Bruschetta

A fresh and simple appetizer with juicy tomatoes, fresh basil, and Parmesan cheese.

Ingredients:

For the bread:

  • 1 baguette, about 20" long
  • 1 garlic clove, peeled and cut in half 

For the topping:

  • 4 medium Roma tomatoes, diced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze or vinegar 
  • 2 tbsp fresh basil, chopped
  • 1 garlic clove, minced
  • 1/2 tsp salt 
  • 1/4 tsp black pepper 
  • 1/2 cup grated Parmesan cheese

Instructions:

  1. Slice the baguette into 3 equal sections. Slice each section horizontally and remove some of the insides to create a cavity for the topping.
  2. In a bowl, combine the topping ingredients except for the Parmesan cheese.
  3. Toast the six baguette pieces and immediately rub each with the halved garlic clove.
  4. Spoon the topping onto each baguette and add the Parmesan cheese on top.
  5. Toast again until the cheese has melted.
  6. Serve and enjoy warm or cold.
