Chewy, buttery and nutty cookies that are easy to make.
Makes 24 cookies.
Ingredients:
- 1/2 cup unsalted butter, room temperature
- 1/3 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 egg yolk, room temperature
- 1/2 tsp vanilla extract
- 1 cup all purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 3/4 cup salted cashews, finely chopped and toasted
- 24 whole cashews for garnish (optional)
Instructions:
- Cream together the butter and sugars. Add the egg yolk and vanilla. Mix to combine.
- In a separate bowl, whisk together the flour, baking powder and salt. Add to the butter mixture and mix to combine.
- Add the chopped cashews and mix well. Dough will be thick.
- Take a tbsp of the dough and form into a ball and place on a baking sheet lined with parchment paper. Continue until all the dough is gone.
- Place a cashew on top of each cookie and firmly press into the ball.
- Bake in a preheated 350°F oven for 12 to 15 minutes until edges are light golden.
