Cashew Cookies

Chewy, buttery and nutty cookies that are easy to make.

Makes 24 cookies.

Ingredients:

  • 1/2 cup unsalted butter, room temperature 
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar, packed 
  • 1 egg yolk, room temperature 
  • 1/2 tsp vanilla extract 
  • 1 cup all purpose flour 
  • 1/4 tsp baking powder 
  • 1/4 tsp salt 
  • 3/4 cup salted cashews, finely chopped and toasted 
  • 24 whole cashews for garnish (optional)

Instructions:

  1. Cream together the butter and sugars. Add the egg yolk and vanilla. Mix to combine.
  2. In a separate bowl, whisk together the flour, baking powder and salt. Add to the butter mixture and mix to combine.
  3. Add the chopped cashews and mix well. Dough will be thick.
  4. Take a tbsp of the dough and form into a ball and place on a baking sheet lined with parchment paper. Continue until all the dough is gone.
  5. Place a cashew on top of each cookie and firmly press into the ball.
  6. Bake in a preheated 350°F oven for 12 to 15 minutes until edges are light golden.
