Walnut Meringue Cookies

A thin cookie with a light nutty crunch.

Makes approximately 30 cookies.

Ingredients:

  • 3 egg whites
  • 1 cup granulated sugar 
  • 1 packet (9g) vanilla sugar 
  • 1/4 teaspoon white vinegar 
  • 1 cup finely ground walnuts 

Instructions:

  1. Whisk the egg whites until foamy.
  2. While whisking, slowly add the granulated sugar and vanilla sugar. Whisk for 1 minute.
  3. While still whisking, add the vinegar and then slowly add the ground walnuts.
  4. Whisk for 5 minutes.
  5. Drop a rounded tablespoon of the batter onto a parchment-lined baking sheet, leaving a 2 inch space between each cookie.
  6. Bake in a preheated 225°F oven for 90 minutes.
  7. After 90 minutes, turn the oven off and leave the cookies in the oven with the door closed until the cookies have cooled.
