
A thin cookie with a light nutty crunch.
Makes approximately 30 cookies.
Ingredients:
- 3 egg whites
- 1 cup granulated sugar
- 1 packet (9g) vanilla sugar
- 1/4 teaspoon white vinegar
- 1 cup finely ground walnuts
Instructions:
- Whisk the egg whites until foamy.
- While whisking, slowly add the granulated sugar and vanilla sugar. Whisk for 1 minute.
- While still whisking, add the vinegar and then slowly add the ground walnuts.
- Whisk for 5 minutes.
- Drop a rounded tablespoon of the batter onto a parchment-lined baking sheet, leaving a 2 inch space between each cookie.
- Bake in a preheated 225°F oven for 90 minutes.
- After 90 minutes, turn the oven off and leave the cookies in the oven with the door closed until the cookies have cooled.
