Creamy Polenta with Roasted Garlic

Add this Creamy Polenta made dreamy with roasted garlic as a budget-friendly side dish  to your next meal.


Ingredients:

  • 1 whole garlic bulb 
  • 4 cups water 
  • 2 vegetable bouillon cubes (OR 4 cups broth in place of water and cubes)
  • 1 cup fine cornmeal 
  • 1/3 cup Greek yogurt OR sour cream 
  • 1/4 cup pecorino cheese OR parmesan cheese
  • 1 teaspoon ground thyme 
  • salt and pepper to taste
  • 1/3 cup fresh chopped parsley 

 

Instructions:

  1. Slice off the top 1/3 of the garlic bulb.
  2. Wrap tightly in foil and place in air fryer at 380°F for 20 minutes. (OR in an oven/toaster oven for 30 minutes or until soft).
  3. In a medium pot, add the water and cubes. Bring to a boil.
  4. Reduce heat to low and slowly whisk in the cornmeal. Keep whisking until combined and smooth. Cook for 15-20 minutes, stirring occasionally.
  5. Turn heat off. Add the yogurt, pecorino, thyme and roasted garlic. Stir to combine.
  6. Add salt and pepper if needed.
  7. Add the parsley and stir again OR garnish with the parsley instead.
