Tex Mex Pockets

A perfect hand-held complete meal with seasoned beef, vegetables and cheese that will have you cheering Arriba!

Ingredients:

  • 1 lb (454g) lean ground beef 
  • 3/4 tsp salt 
  • 1/4 tsp ground black pepper 
  • 1 onion, chopped 
  • 2 cloves garlic, chopped 
  • 1 red bell pepper, chopped 
  • 2 tbsp tomato paste 
  • 4 Roma tomatoes, chopped 
  • 2 tbsp pickled jalapeno peppers, chopped (optional)
  • 1 tsp ground cumin 
  • 1 tsp chili powder 
  • 1/2 tsp paprika or smoked paprika 
  • 1 lime
  • 2 tbsp chopped cilantro 
  • 1 cup sour cream 
  • 2 cups shredded cheese (Tex Mex blend or cheddar)
  • 6 10-inch tortillas 
  • oil for brushing 

Instructions:

  1. In a large skillet, add the ground beef and cook over medium heat until browned breaking up large chunks as it browns. Season with salt and pepper. Spoon out fat by tilting the skillet.
  2. Add the onions and garlic. Stir and cook for 2 minutes.
  3. Add the red peppers, tomato paste, tomatoes, pickled jalapenos, cumin, chili powder and paprika. Stir and continue to cook for 5 minutes.
  4. Remove from heat and add the juice of the lime and the fresh cilantro. Stir and let cool slightly.
  5. Place a tortilla on work surface. Add about a cup of the beef mixture in the centre of the tortilla. Place about 21/2 tbsp of the sour cream and about 1/4 cup of the shredded cheese on top.
  6. Fold the edges of the tortilla towards the centre ending up with 5 or 6 sides, making sure contents are tightly wrapped. Continue with the remaining tortillas or until beef mixture is used up.
  7. Brush both sides with oil and place seam side down in the skillet and cook over medium heat until browned, about 3-4 minutes. Flip and crisp up the other side.
  8. Remove from heat and let cool slightly. Eat whole or slice in half. Enjoy!
